I love vegetables! I love trying them in different ways and adding different seasonings just to mix it up a bit, and one veggie in particular that I have been experimenting with is asparagus!
Asparagus was one of my favorite vegetables growing up, and I still eat it regularly now. Fresh asparagus is my favorite! I usually steam it, but I have been roasting it lately.
I love roasting it because you can decided how tender you want it to be. I sometimes let mine get really soft, but sometimes I like them to have a crispy outside, like a french fry.
I always add a little salt, pepper and garlic to mine. I sometimes add some chipotle seasoning for a little kick.
I paired it with some lemon pesto salmon! You can see it featured in my what I eat in a day video.
