It’s summer here in Texas, and for me, that means when I walk outside my breath is taken away. Funny enough, that doesn’t stop me from pulling out the grill when the sunsets. You can’t separate a Texan from her grill.
It just makes me wish I had a pool.
One of my favorite new thing to do is make grilled quesadillas. It combines the Texan love for grilling with the Texan love of Mexican food. Plus, quesadillas are also a very customizable food, so they can cater to all of your guests – even the more picky eaters.
Add it with my classic homemade salsa, and you have an easy meal that’s great for parties and get-togethers! Plus, people are always so impressed when you say your salsa is homemade – even when it is so easy!
And everyone loves salsa, and those who don’t like it, probably shouldn’t be invited to your party in the first place.
I am going to share my favorite grilled quesadilla recipe with ground beef! It takes on the classic hamburger, but Tex-mex style!
All the ingredients can easily be found at your local Walmart!

Homemade Salsa
INGREDIENTS:
1 can of Hunt’s® Diced Tomatoes
2 cans of RO*TEL®
1/2 cup of chopped onion
1 clove of minced garlic
1 whole jalapeño, sliced and seeded
1/4 tsp sugar
1/4 tsp salt
1/4 tsp of ground cumin
3/4 cup of cilantro
1 tsp of lime juice
INSTRUCTIONS:
- Put all the ingredients into food processor and blend until you reach desired consistency. I like mine pretty smooth with a little chunks.
2. Put leftovers in a mason jar – or triple the recipe and share with your friends!
Grilled Beef Quesadillas
INGREDIENTS:
2 Flour Tortillas
4 oz of ground beef, seasoned with taco seasoning
1/2 cup of queso fresco
1/4 cup of shredded cheddar cheese
1/4 cup of chopped onion
INSTRUCTIONS:
- Get the grill heated outside – I have a charcoal grill, and I use self-lighting charcoal
- Put together your quesadillas by sprinkling ground beef, queso fresco, shredded cheddar cheese and onion on one tortillas and placing the other tortilla on top
- I prefer wrapping my quesadilla in foil. This speeds up the cooking process and locks in moisture. You can also lightly grease the grill, and build your quesadilla right there on the grill. If you are having a party, you can spread out the fill-ins and let everyone make their own. Then, the grillmaster can throw them in the grill!
- Grill the quesadilla for 5 minutes on each side
- Serve with the homemade salsa
