Cooking for me has always been easier said that done. By the time I finish my work shift, I am too exhausted to create a meal – so it’s either frozen or take out.
Now that my sisters have moved in, we have been cooking more and more. It’s so much easier now that we can divide up responsibilities and have specific days to cook. However, I am still busy, so on days where I am the “meal provider”, I still make sure the recipe is easy, but delicious.
One of my new favorite quick fixes is my avocado bacon flatbread! They are super simple to make, and they taste so good!
Ingredients (per flatbread):
1 pre-made flatbread
1 tsp of olive oil
1/2 cup of mozzarella cheese
1/4 cup of cooked bacon
1/4 cup of chopped red onion
1/2 sliced avodaco
Drizzle of Spicy Ranch Dressing
Pinch of salt and pepper
To prep, I put the bacon in the oven preheated at 350 degrees. I really like to cook my bacon in the oven for two reasons.
- It gives it a really crunchy even bake
- You can put it in the oven, and work on other things
So while my bacon is cooking in the oven, I can chop my red onion and and my avocado. Once the bacon is done, I also chop it all up, so it’s ready to go on the flatbread.
After I am done getting all my ingredients, I brush the olive oil on my pre-made flatbread. I used the Flatout Thin Crust Flatbread Spicy Italian.
Then, I sprinkle on salt, pepper, and the cheese onto the flatbread.
I like to place the flatbread on a cookie sheet covered in foil. This keeps my cookie sheet clean, and easy to wipe down and put away afterwards!
After letting the cheese melt for about 7-10 minutes in the oven at 350 degrees, you can sprinkle on the bacon and the onions.
After another 5-7 minutes or until the cheese is fully melted, you can take out the flatbreads and add the avocado and drizzle on the spicy ranch.
