The minute there is a chill in the air, my home becomes a pumpkin castle. I pull out all of the pumpkin spice candles, pumpkin snacks and pumpkin decor – some may call it an addiction.
My favorite morning combination for a crisp fall morning is some homemade pumpkin biscotti and a Vanilla International Delight® One Touch Latte™. All you have to do is start with a cup about two-thirds full of plain coffee.

PUMPKIN SPICE BISCOTTI RECIPE
Can you really enjoy a cup of coffee without biscotti or a scone?
One of my favorite easy recipes for fall is pumpkin spice biscotti. The recipe takes about an total of an hour to cook and prepare.
I had the help of three fluffy bakers – don’t worry, they didn’t actually touch the ingredients on the account that they do not have thumbs. Baking with buddies always makes the time go by faster though (especially when you’re jamming to the classics like John Denver and Tom Petty).
I like to dip my biscotti in white chocolate, but feel free to leave it plain of dress it in another type of chocolate!
Ingredients:
2 1/2 cups of flour
1 cup of brown sugar
1 tsp baking powder
1 tsp pumpkin pie spice
1/2 tsp cinnamon
1/2 tsp salt
2 tbsp butter
1 tsp vanilla
2 eggs
1/2 cup of pumpkin puree
White chocolate chips
Preheat the oven to 350 degrees
In a mixing bowl, put together all of the dry ingredients
Using a pastry cutter, blend the butter into the dry ingredients
In a separate bowl, mix the vanilla, eggs and pumpkin puree
Fold the liquid mixture into the dry mixture
On a floured surface, kneed the dough and shape into a long, flat roll
Bake for 20-25 minutes, let cool
After biscotti has cooled, cut horizontally with bread knife
Melt the chocolate chips in a cup and dip the biscotti into the chocolate
Place the biscotti on wax paper until the chocolate hardens
