One of my favorite things about dieting is trying weird new healthy foods. When I am eating normally, I tend to choose the same things over and over again. However, when I am on a diet, I am always being pushed out of my comfort zone.
I had never had acorn squash, and in one of my clean eating meal plans from years ago, I got the chance to try it. I loved it so much, and I keep trying to make new recipes!
My all-time favorite for the winter season is a turkey stuffed acorn squash!
Ingredients
1 acorn squash, halved
8 ounces ground turkey
1 small onion, diced
2 cups kale leaves, chopped
6 sage leaves, chopped
3 tsp tomato paste
3 cloves garlic
1 tsp curry powder
3 tsp olive oil
Instructions
1. Preheat oven to 400 degrees and then cut the ends of the acorn squash.
2. Cut squash in halve, spray or brush olive oil onto the squash. Season with salt and pepper and place face down on a greased baking dish and put in the oven for 20-25 min.
3. In a skillet, heat 1 tsp of olive oil. Add the onion, garlic, salt and a pinch of pepper. Cook until onion is translucent. Add the sage leaves and kale and cook until leaves are a dark green color. Then take off heat.
4. In a large bowl combine turkey meat, curry powder, tomato paste, salt and pepper and the mixture you just cooked and stir it all together with a spoon.
5. Take out the acorn squash when the timer goes off and stuff the mixture into them evenly. Place them back into the oven until the ground turkey has fully cooked.
6. Serve!
