Brunch is my favorite meal – and I love to make a themed brunch. As you can imagine, my favorite autumnal flavor is… PUMPKIN.
I have made pumpkin scones, pumpkin lattes, and pumpkin cookies! This time around, I wanted to make some pumpkin pancakes.
Not only did I add pumpkin, but I sprinkled in mini chocolate chips as well. I topped it with homemade whipped cream, syrup and chocolate chips.
This paired great with my homemade pumpkin spice latte (seriously, someone send me an espresso machine).
This recipe makes about 6-8 pancakes. My sister said the pumpkin pancakes were amazing, and she is incredibly picky.
BONUS TIP: Freeze the leftover pumpkin in ice trays for a treat for your dog.
INGREDIENTS
2 cups of flour
2/3 cups of sugar
1 teaspoon salt
1 teaspoon cinnamon
1 teaspoon pumpkin pie spice
4 teaspoons of baking powder
1 1/2 cup of milk
2 eggs
1/2 cup of oil
1 cup of pumpkin puree
INSTRUCTIONS:
Combine the dry ingredients in one bowl (except the chocolate chips) and the wet ingredients in another bowl. Pour the wet ingredients into the bowl with the dry ingredients.
After mixing, heat a skillet. Drop about a cup of batter onto the skillet, and then sprinkle the mini chocolate chips onto the batter.
Flip the pancake when it starts to bubble up! Serve!
