When the temperature drops, my soup senses start to tingle. This season, I made a sausage tortellini soup, and it is delicious.
My sister was skeptical, but she ended up loving it too! The soup is extremely easy to make, and you will have extra for the next day.
The one thing I hate about sharing soup recipes is measurements. I always add things to soup until it tastes right. So, when making the recipe, be sure you have a tasting spoon handy!
INGREDIENTS
Package of tortellini
3 handfuls of spinach
5 ounces of evaporated milk
17 ounces of heavy cream
Half of a chopped onion
1.5 ounces of Italian sausage
32 ounces of beef broth
1 beef bouillon cube
1 tbsp of Italian seasoning
Cornstarch
Milk
Water
Salt and Siracha Pepper seasoning to taste
INSTRUCTIONS
In a large pot, brown the Italian sausage and the onion.
Once the sausage has browned, add the beef broth, Italian seasoning and bouillon cube.
After the mixture begins to simmer, add the heavy cream, evaporated milk and tortellini. In a bowl, mix 1-part cornstarch (I usually start with ¼ a cup) and 1-part water. Pour into the soup to thicken it.
Let the mixture boil and the tortellini cook. Once the tortellini are cooked, add the spinach and let it wilt.
Once the mixture begins to boil, begin to add milk and more cornstarch until you get the consistency you want.
Add salt and sriracha pepper to taste.
Serve!
