Lately, I have been a brunch-making fool. I keep trying to make more unique brunch recipes, so I eventually combined my sister’s favorite breakfast with my favorite spice.
Meet Pumpkin Spice French Toast. Toast. Pumpkin. Butter.
One of my favorite season goodies is pumpkin butter. I usually put it on my pancakes and waffles, but it inspired me to make a special autumn french toast. And, I mean real french toast with Texas toast, none of that other B.S.
To be extra basic, I served my pumpkin spice french toast with a pumpkin spice latte with my new Ninja coffee bar. If you would like to see coffee recipes, let me know in the comments!
You could call it Pumpkin Spice French Toast with a Pumpkin Spice French Roast!
INGREDIENTS
2 eggs
1/2 cup of half and half
1/2 cup of whole milk
1/2 cup of pumpkin puree
1 tsp of vanilla
1/2 tsp if pumpkin pie spice
1/2 tsp of cinnamon
1/2 tsp of sugar
pinch of salt
butter
powdered sugar
6 pieces of Texas toast
(for the pumpkin butter)
2 sticks of salted butter (room tempature)
1/3 cup of pumpkin puree
3 tbsp of maple syrup
1 tbsp of honey
1 tsp of vanilla
1/2 tsp of cinnamon
1/2 tsp of pumpkin pie spice
INSTRUCTIONS
Melt a glob of butter on a skillet on the stove
Whip together the eggs, half and half, milk, sugar, spices, vanilla and pumpkin puree
Dip the Texas toast in the mixture and then grill on the skillet. Make sure to toast both sides (2-3 minutes)
To make the pumpkin butter, use a hand mixer to soften the butter. Then, slowly add the rest of the ingredients. Beat until fluffy.
Serve the french toast with maple syrup, powdered sugar and a dollop of pumpkin butter!
