Brunch is my favorite meal of the day – but it is hard to tackle when you are trying to live a healthier lifestyle. Sure, you can get eggs and bacon – but brunch is typically known for eggs benedict, pancakes and other piles of carbs.
I wanted to make something delicious and more interesting than a simple breakfast, so I decided to try making a frittata. After the success of this dish, I will be experimenting with more flavors.
Since I hadn’t made a frittata in forever, I wanted to keep this one simple. I created a ham, cheese and broccoli frittata that is perfect for any brunch!
If you are on a health kick and want a fun breakfast, it really is incredibly simple. You will need an oven safe pan for this recipe, like a cast iron skillet.
INGREDIENTS
6 eggs
1/3 cup of milk or heavy cream
1/3 of an onion
2 broccoli florets
Sliced ham
1/2 cup of shredded cheese
Olive oil
Minced garlic
Salt
Pepper
INSTRUCTIONS
Preheat oven to 375 degrees
Start by heating up olive oil on an oven-safe skillet. Sautee chopped onion and minced garlic.
Add chopped broccoli florets and cook until tender. Add chopped ham.
In a separate bowl, mix eggs, heavy cream, salt and pepper. Pour into skillet when broccoli is ready and mix.
Move skillet to the oven and bake for 12 minutes
