When I was in college, I used baking as a coping mechanism. I would bake all the time because I was overwhelmed. Cinnamon rolls, cupcakes, cookies, pastries – you name it, I baked it.
My roommate would come home, and I would have cupcakes overflowing in the kitchen. She would instantly know something was up and leave me alone (after being force-fed a baked good).
But I wanted to try something a little different, and I had never made butter cookies. And I love dark chocolate and citrus – so I wanted to use the two flavors to create a cookie.
This is not your typical soft, chewy cookie. Butter cookies are like the cookies that come in the tin can during Christmas time. They are more solid and dense, and they have a buttery taste (obviously).
I just wanted to make that clear before I disappoint people when they make this cookie! You can also make it any shape that you want to, but the dough is very sticky, so be prepared to use flour (or sugar)!
If you want a more orange taste, add some citrus extract to your cookies.
INGREDIENTS
- 1 cup (2 sticks) butter
- 1/2 cup confectioners sugar
- 1 teaspoon vanilla extract
- 1 tablespoon orange zest
- 1 1/2 cups all-purpose flour
- 1/2 cup cornstarch
- 1/2 teaspoon salt
- 1/2 cup dark chocolate, cut into small pieces
INSTRUCTIONS
Preheat oven to 350 degrees
Whisk together butter and sugar. Add vanilla and orange zest.
Mix in flour, cornstarch, and salt
Sprinkle in chocolate
Scoop into rounds on a baking sheet with parchment paper
Bake for 10 minutes
