Once I got my propane grill, I started to grill everything. My sister, Courtney, would tell you I was a little obsessed.
And I am going to brag and say that I am actually pretty damn good at it. One of my feats that I was most excited about was when I perfected a steak. When I finally felt that I got it right, my sister and my brother both told me it was the best steak they have ever had at home.
We are a beef eating family, so this is a big deal. Plus, grilling a perfect steak is much easier than it sounds.
Here are a few do’s and don’t’s for making a perfect steak:
DON’T MARINATE IT
Growing up, we always marinated steaks. After some research and trial and error, I quickly learned this is how you create a chewy texture that is less than appetizing. If you want to grill a steak that taste like restaurant quality, avoid marinating it. If you are going to make stir fry or fajitas, marinate away.
About 15 minutes before putting it on the grill, I cover my steaks in olive oil, Worchester sauce and salt. The key to this is lots and lots of salt.
DO LEAVE IT AT ROOM TEMPERATURE
When I first started experimenting, I thought this tip was stupid. It is going on the grill, why does it need to be room temperature. However, when it is room temperature, it is easier to get the perfect medium rare steak. It cooks more evenly and tastes delicious.
DON’T THROW IT STRAIGHT ON THE GRILL
The key to great grill marks is making sure your grill is hot before throwing it on the grill. If you want an even and beautiful cook, let your grill heat up for about 10-15 minutes.
DO GO TO A BUTCHER
If you really want to impress someone, ask for a fresh cut from your local butcher. I always get a ribeye from the butcher shop at my local H-E-B, and my sister can taste the difference without me telling her.
