For the month of March, I am incredibly proud of how much my sister and I have cooked at home. We are putting some miles into our kitchen. One of my favorite things is to try to make a recipe out of a few items left in the fridge. This is where the Chicken Black Bean Casserole recipe came to life.

Without this salsa, you really don’t get the same kick in this Chicken Black Bean Casserole recipe!
Ingredients
Green Mountain Gringo® Medium Salsa
Corn tortillas
1 lb of chicken
1/2 cup of black beans
1 can of green chiles
16 oz of shredded cheese
1 cup of corn
Instructions
Set your oven to 400 degrees. Roast your chicken with salt and pepper in the oven until fully cooked.
Shred chicken in a bowl.
Add black beens, green chiles, salsa and corn.
Set your oven to 350 degrees.
In a casserole dish, start your layering. Create a layer of corn tortillas. Then, add your filling and top with cheese.
Continue layering until you fill your dish. Put in the oven for 15 minutes.
Serve and enjoy!
